PHEASANT WITH APPLE AND MAPLE SYRUP (serves six)

6 pheasant breasts (ask your butcher to prepare these for you)
6 Granny Smith apples, peeled and cored and chopped into quarters)
3 large shallots
1 bay leaf
sprig of thyme
4 fl oz apple cider vinegar
½ pint chicken stock
5 tsp maple syrup
1 tsp unsalted butter
olive oil s
alt and pepper

Cook the pheasant
Sear the pheasant in a pan. Cook until the meat is brown, then remove the pheasant and juice; add the shallots, apples, bay leaf, thyme, salt and pepper to a little oil and cook for three minutes.

Add the stock
Increase the heat and add the vinegar. Cook for three minutes, or until the mixture is almost dry. Add the stock and syrup and bring to the boil. Reduce the heat to just below simmering, and return the pheasant, plus the juice, and braise slowly for 15 minutes. Remove the pheasant, and the apple and bay leaf. Allow the meat to rest.

Reduce sauce
Reduce the sauce over a high heat for 10 minutes. Whisk in the butter and place the pheasant, sauce and apple on plates and serve with your favourite vegetables.

ROASTED SADDLE OF VENISON WITH CREAMED CABBAGE, BACON, ROASTED FIGS AND BITTER CHOCOLATE SAUCE

4 x 100g pieces of venison saddle
1 small head of savoy cabbage
2 rashers of streaky bacon
4 large figs
150ml double cream

Seal the venison
Heat a splash of oil in a frying pan, season the venison saddles and seal on all sides in the frying pan.

Bake the venison
Remove from the pan and place on a baking tray in a pre heated oven (200ºC) for approximately seven minutes. Take the venison out and leave to rest in a warm place.

Quarter and roast the figs
Cut the figs into quarters and season with salt, pepper and a little sugar and roast for five minutes in a warm oven.

Fry the bacon and cabbage
Finely slice the bacon and fry in a little oil. Finely chop the cabbage and add to the bacon. Cook for three to four minutes with half a teaspoon of salt and then add the cream.
Cook for a further three to four minutes and take off the heat, check the seasoning and leave somewhere warm.

The sauce
1 large shallot
4 black peppercorns, crushed
100ml red wine vinegar
300ml red wine
500ml game stock
10g bitter chocolate

Chop the shallot
Finely chop the shallot and crush the pepper- corns. Place in a pan with the red wine vinegar and reduce until all the vinegar has evaporated.

Add the wine and reduce
Add the red wine and reduce by half, add the stock and reduce by a third. Finally whisk in the chocolate until it has all melted and strain the sauce through a sieve.

Assemble the dish
To serve, place a pile of the creamed cabbage and bacon on a plate. Finely slice the venison saddle and place on top of the cabbage, arrange the figs around the plate and pour over the sauce.

It must be the wettest day in recent memory.  The rain just never stops.  Gardening is out of question.  Instead I have radio 4 on and compiled some files on computer.  I would really like to have my hair done in Swaffin instead of thursday if Richard didn't ask me to mind his phone and internet bookings.  I also fed puppies with more milk and venison; the smallest one couldn't manage the venison.  She couldn't swallow it like others, but she drank the milk on her own, she was so eager for the milk that she even dipped her front paws in it.  Elsa waited underneath hoping for some scraps of venison although she already had chuncks.  I would hand her puppies with milky chin and paws and she would lick them clean.  I then gave the puppies another round of kisses before placing them back to sleep.  I think kisses have positive calming effect on puppies.  When they get kisses, their eyes are half close and soon after go into sleep happily!
 
These little cuddly ones are my daily amusement.  Very decadent not to spend my time on more meaningful project like saving the planet or other noble courses.  I told myself after all if wasting one's life makes one feel so good; it must be the justifiable reason!  :-)
 
Last night we watched Thomas Crown Affair on DVD.  Richard fell asleep almost instantly when the film started.  He made a log fire and felt so cosy that he slept on until the huge splash on film woke him up.  It was the part when Thomas Crown sunk his  $100K race boat for the splash. 
 
Thank God for that.  I would not want to watch the film on my own! Richard also loved adventure and thrills and was drawn back to the story line.  I loved the film that is why I bought the DVD as well.  It is beautifully made with clever dialogues and breathtakingly sexy seduction love scenes.  Rene was in her 50 when she played the glamourous insurance investigator, however she appeared so lucious, sexy and beautiful.  It is one of the rarest film which upholds class, character and sophistication above youth and beauty alone.
 
The feel good factor; the can do attitude, good looks and great life style, who can possibly resist all these?  the formula of  the American film is fool proof way to secure audience and ticket sale.  Weeping Korean films i simply don't want to watch, however artistic it might be,  
 
I mustn't forget another simple and unselfish thing i did for Richard.  I got up at 2.30am to switch on the bread machine in order he would wake up to the aroma of freshly bake bread!  Well I don't have to get up at half two in the morning if I remembered to take the bread machine manual with me when I removed the machine from home.  For there is timer with the machine, i could simply follow the instruction and the machine would switch on by itself at the set time.  Last night before going to bed, i measured the ingredients and set the timer according to my shaky memory and stupidly pressed 'On' button, which started the machine prematurely.   I didn't want to switch off the machine and waited the period required for the machine to forget the command wrongly given by me.  So I switched it off and decided to get up whenever i woke up during the night.  Well Richard went to loo at 2.30, so i got up as well to switch on the bread machine. 
 
I woke up again at 6.15 to let Jeff and Elsa in the garden.   The kitchen was filled with lovely aroma of the home baking.  The bread was 9 minutes nearly baked!  I gave Elsa some food with venison gravy for she needed extra for her puppies. Jeff went to our bedroom and refused to leave and later jumped on the bed to sleep in between.  Elsa came after she finished her food but she behaved herself by sleeping on the floor instead of on the bed like she sometimes did.    
 
Richard got up at 7ish and I had my 'lie in' until nearly 9am.  I could never get up as late as this in the city.  The noises of traffic and people would have driven me up.  I was surprised to see he managed to take the bread out of bread machine without breaking it and he had sliced the bread neatly.  Richard after all was not as clumsy as I feared, he could do lot of things unexpectedly well.  He told me he enjoyed the bread very much!  Perhaps he would like the bread even more if I buy a proper scale to measure out the ingredients precisely.  Then the bread will rise higher and have a even better texture.
 
If tomorrow is sunny, I would like to go to Cambridge or London for a change of this domestic life!

It has been nearly 6 weeks since Elsa had her 9 puppies.  They are all growing fast and developing into lovely dogs, each one unique with its own personality just like a little human beings!  Some are good natured, playful and sociable, some are placid, some are constantly seeking attention, others could be totally independent, even aloof.  One of the family in the village decided to take the deep tan colour male puppy which was the biggest of them all.  They had the first choice since their dog Ben is the father of the puppies.  The children called this puppy Tang and it gave me the idea to call the puppies by the names of Chinese Dynastiies.  The small female one with black nose is obvious candidate for Qing; Yuan is the the paler colour male pup which has a head like mongolian and is very laid back and my favourite; I would choose him if I were allowed to have one; Song should also be the name for one of the smaller tan colour female, she does look very cultured and trimmed ;-) I haven't assigned all the names to all the puppies, which hasn't become essential, firstly because they will only be named something entirely different when they go to their new home, and secondly, they come towards me as soon as I call out 'come here puppies!'
 
There are 3 male and 6 female pups.  As a rule, males are much larger than the female pups, but one of the tan colour female is exceptional large, she has got really blue eyes and has a comical funny side!  She has cute cat walk steps coupled with tail waving in the air!  She loves to be picked up and would run fastest than anyone else whenever I appear in sight.  She is ususally rewarded with extra plate of milk or some venison.   She also would run towards Elsa and pester for milk, though Elsa is no longer keen to feed any of them since these puppies now have needle sharp small teeth.
 
The big puppies are the one who stick to nipples and food bowls at the feeding time.  One of the small puppies is very fussy.  She seems to think grass is greener on the other side so she keeps wondering from one to the other nipple or food bowl and ends up eating less than others.  She is also like to be alone and would play on her own or chooses a different path.  She found the main doorway and waited by the door at 6am today.  Richard let her in and she just slept in one of the arm chairs.  It doesn't bother her if other brothers and sisters are not with her.  I always give her extra food and want her to  catch up in size with others.  However she has a small appetite and even with venison she never overeats unlike her much greedier sibblings.  I think she is much more intelligent, fully alert of what is going on and will be a great dog like Elsa.
 
I asked for Tang to be left behind and he got very special treatment, he slept in the best chair and was given strips of venison as snack.  At one of his snack time, the phone rang, I went to answer the phone and left him at the table top with a bag of cooked venison; by the time I came back he already wolfed down lot of the meat and his belly was round and full like a ready stuffed suckling pig!  Now he is in my arm semi asleep while I am writing this article
 
Undoubtedly, they will all be greatly missed when they leave for their permenant home.  The reason for not being able to keep one for ourselves was there are already 3 dogs in the house.  Richard bought a grey haund called Frisse.  She was mostly black with intelligent eyes and long legs and tail.  She is completely fearless and she charges around the house having a go at anything whenever she feels like it.  She plays very rough with the puppies, bites their neck, ears and tails or jumps on top of them to make them scream like hell.  Elsa sometimes has to step in to intervene and Frisse will fight Elsa instead.  Of course Frisse is only playing, she is such a spirited dog and will be so useful in hunting.  When she is tired, she will stand still and let puppies chew her collar and nuggle up to her and she would also sleep like an angel all sweet and innocent looking. 
 
Jeff is totally anti Frisse, for Frisse plays rough and Frisse gets lots of love and attention from me.  Frisse is the only thing Jeff barks excluding his natural prey-  birds.  Jeff has finally realised she is here to stay and he has to live with her, whether he likes it or not.  Jeff has strong competiton with 9 puppies and Frisse but he never knows he is my most favourite one, for I know him first....  and what is more he is mine, all mine!

 My younger brother finally found the girl he is prepared to marry.  All our family is overjoyed.

Before when i urged him to take action, he would always say well, i don't want to jump the queque.  Of course i knew it was one of his excuses and toss the issue back to me, implying the fact that i shouldnt throw stone at him while i was in the same glass house of in-action !

I am more impatient than  them to get them married and dream about being an aunt at long last!  The advice i gave my mum is to treat  the future daughter in law better than her own daughter and love her as if she were her own!  Of course she must not forget about me all together!

Best Easter news so far.  I love 2008!

  Just to remind lovely ladies here that today is a very special day.  You are allowed to propose to the man of your dream!  Have u got a boyfriend who is too shy to ask you?  Instead of waiting forever you are allowed to take the initiatives and propose to him instead. Tonite girls in high street will dress to kill and behave a bit outrageously.  If you are new to Western culture and customs, you may puzzle and miss all the merry-go-around.

 The table just sold at bonhams hk auction  for 70,000 hk dollars today.  i got a pair of them at the bottom of the built in wardrobe in my bedroom!  One of them occassionally brought out when i used laptop in bed.  When i first got them in 2001, used it more often but fearing the heat generated by the computer might damage them, i rarely use them nowadays. 

 
I love the intricate carving and the way they were made.  i couldn't find a nail in the construction.  i marvelled at their workmanship.  The carving reveals 9 alternative layers of black and red paint, with a central panel of joined ruyi heads interspersed with florettes, bordered by a classic scroll incorporating ruyi heads, the design repeated on the apron and extending to the short cabriole legs, the waist carved with a band of dashes and dots, the underside coated in black lacquer, centered with a four-character Xuande mark carved in relief and enclosed by a square against the red lacquer under layer.
 
However it is difficult to find a place to display them.  It is too low as a coffee table.  As a display stand, the intricate carving might outshine any item on display! The one place suitable is on a bed, where they were intended for!  In 18th century, people had the strange custom of receiving their guests in bed chamber and even progressed to have tea or a smoke while having a cosy chat or good old gossips.  Thank god we don't do that any more.  Unless one gets very ill, the guests don't get shown into the bedroom!  Kang tables are redundant in their function i suppose.  The workmanship may be  highly skilled, and technically demanding.  A smaller item of boxes or bowls of such workmanship can usually fetch higher prices than the kang tables.  The one sold today is just under its estimate, it was estimated at 80, 000-120.000 originally but sold with auctioneer discretion i suppose. 
 
I should  bring them out more often to enjoy, or loan one of them to the local museum, perhaps even sell one for profit taking, and about time too ;-).

Wise British, Cocky American and indifferent Chinese

At the aftermath of tragic shootings in Virginia, the wise British contributed the cause of tragedy to the gun culture of the American society.  They listed all the relevant statistics to make comparison of the victims of gun crimes across countries.  Surely, they argued, tougher restrictions, such as those in force in European countries, could at least reduce the number of gun victims?

 

The Americans proudly defended their right of owing guns as the right of free speech.  At the news conference, one official even said if only some of the victims also possessed a gun, then they might well be able to defend themselves.  Presumably students should take fire power to classroom just in case there is a shooting match?  They do have a point for who in their right would trust one of those well-fed, pot-belly, tip-toed walking policemen who are armed to teeth but only arrived when everyone had died!

 

And the Chinese congratulated themselves that the gunman, after all was not Chinese, as was previously feared.  The whole thing now has nothing to do with them.  But just lie low, in case be mistaken as Koreans and got blamed!

  (雅昌艺术网讯 本网记者)一连四天在香港会议展览中心举行的苏富比香港春季拍卖会于今天闭幕,今春拍卖会再创骄人成绩,逾1,200件拍品包括中国艺术品、珠宝及腕表,总成交额高达10亿5千零18万6千100港元 (拍卖前总估价为8亿9千1百90万至11 亿6千200万港元)*。
 
  苏富比亚洲区主席黄林诗韵女士表示:“苏富比香港很高兴在这数天与来自亚洲及世界各地的买家共聚一堂。我们非常荣幸得以委托拍卖不同种类之艺术珍品,也特别为徐悲鸿之超凡油画代表作《放下你的鞭子》刷新中国画家画作的世界拍卖纪录而感到鼓舞。市场仍见强势,且位处高峰,各场拍卖也有新的买家参与。”

  苏富比欧洲及亚洲区副主席及亚洲区执行董事司徒河伟先生(Henry Howard-Sneyd)表示:“从今春的拍卖可见,苏富比香港连续五年表现上扬,业务大幅增长,总成交价升幅达三倍。期间中国大陆冒起新一群收藏家,同时全球买家的收藏活动也扩展至不同的范畴。此外,‘花赏瑶华──巴黎名藏中国艺术品’专场拍卖的拍品悉数拍出,作为拍卖官,我为赢得一对‘白手套’而深感荣幸,更觉喜悦的,则是数个类别的拍项均获高售出比率。”

   总成交额:2亿1千447万2千400港元,刷新苏富比全球之当代中国艺术纪录(拍卖前总估价为1亿1千640万至1亿5千790万港元)。

  今春最高价的拍品为中国现代大师徐悲鸿之鲜见油画代表作《放下你的鞭子》(lot 29, 拍卖前估价超越3千万港元),以7,200万港元之天价成交,刷新中国画家画作的世界拍卖纪录,并大幅打破画家本人不久前的世界纪录。

  刘野、韦蓉、林明弘、侯俊明四位中国当代画家的个人世界拍卖纪录也得以刷新。

  买家地区(以拍品件数计算):76 % 亚洲人(28.7% 香港;26.3% 台湾; 12% 中国;4.8% 新加坡;2.4% 印度尼西亚;其它来自韩国、日本及泰国); 13.2% 欧洲; 9.6% 美国;0.6% 中东。

  中国瓷器及工艺品之三场拍卖--2007年4 月8日

  三场拍卖总成交额:4亿5千127万5千200港元 。(拍卖前总估价: 3亿8千343万港元至5亿1千743万港元)

  共有12件拍品以逾1千万港元成交

  买家地区(以拍品件数计算):78.2 % 亚洲人(37.1% 香港;19.4% 中国; 18.5%台湾;1.6% 澳门); 20.2% 美国;1.6% 欧洲

  (一)花赏瑶华──巴黎名藏中国艺术品专场拍卖

  总成交额:1亿2千830万零4千港元 (拍卖前总估价为6千390万至8千780万港元)

  呈六方形的清雍正粉彩浮雕花鸟纹六方觚由香港古董商翟健民先生以2千272万港元成交,大幅高出拍卖前之最高估价(拍品编号:507;估价600至800万港元)。

  (二)玉承天令──乾隆宫廷艺术品专场拍卖

  总成交额:9千760万港元。(拍卖前总估价为7千600万至1亿零800万港元)

  拍卖中包括5件乾隆玉器,当中清乾隆御制翡翠和阗玉扳指七件连御制诗剔红紫檀三鱼朶梅海水纹盖盒(拍品编号:602,估价超越4千万港元),以 4千736万港元成交,由一名亚洲收藏家投得。

  另一拍卖焦点为清乾隆御制紫檀木嵌“延年”龙凤纹古玉璧御题诗插屏(拍品编号:603,估价超越约1千500万港元),成交价为3千448万港元,由一名亚洲收藏家标得。

  (三)中国瓷器及工艺品拍卖

  总成交额:2亿2千537万1千200港元。(拍卖前总估价为2亿4千350万至3亿2千160万港元)

  当中清乾隆珐琅彩锦地开光式“西洋人物”图贯耳小瓶《乾隆年制》款(拍品编号:806;估价1千至1千200万港元),由一名亚洲收藏家以3千392万港元投得,比拍卖前最高估价高出3倍。

  中国书画春季拍卖--2007年4 月9日

  总成交额: 1亿1千810万港元(拍卖前总估价为5千890万至8千340 万港元) 。

  今季拍卖焦点是李可染的《树杪百重泉》,由一名亚洲买家以838万4千港元成交(拍品编号:1126;估价180万至250万港元),比拍卖前估价高出多倍,赢得在场人士之掌声。

  买家地区(以拍品件数计算):94.3 % 亚洲人(43.9% 香港;29.2% 中国; 13.7%台湾;6.1% 新加坡;1.4% 马来西亚); 5.2% 美国;0.5% 欧洲

  名贵腕表拍卖--2007年4 月9日

  总成交额:2千300万零4百港元(拍卖前总估价为1千640万港元至2千260万港元) 。

  拍卖包括20枚百达翡丽(Patek Philippe)手表,最高成交价的是百达翡丽极为罕见3448型号腕表(拍品编号:1350 ;估价1百56万港元至2百34万港元),以168万港元成交。

  瑰丽珠宝及翡翠首饰春季拍卖--2007年4 月10日
  
  总成交额:2亿4千3百22万港元(拍卖前总估价逾3亿1千6百80万至3亿8千零80万港元)。

  成交价最高的是一串翡翠配钻石珠链 (拍品编号:1816;估价2千500万至3千万港元)以2千6百万零6万港元成交。

英女王所藏古董中国茶壶拍出1641万

  中国香港苏富比拍卖行日前以107.9万英镑(约合人民币1641万元)的天价,拍出一件曾由英国女王伊丽莎白一世收藏的中国茶壶,买家是一位由伦敦古董商代理的神秘客户。据悉,这件瓷器产于公元16世纪末期的中国明代,是当年由中国传入英国的首批皇家瓷器之一。

  据初步考证,该古董当年可能是在被一名英国探险家或商人从中国购得后,于16世纪带回英国国内,随后被一名爱拍马屁的宫廷弄臣当作礼物进贡给当时的英国最高统治者、英女王伊丽莎白一世。1603年,伊丽莎白临终的时候,特意将自己的心腹英格兰伍斯特郡大主教亨利·帕利叫到病榻之前,亲自将这一宝贝遗赠给后者。在随后的几个世纪中,该茶壶历经数次私人拍卖会,几易其主。
